Coffee, from the inside

One seed, from cherry to roast.

  1. On the branch

Coffee starts as a white flower on a shrub. The fruit sets small and green, and ripens slowly, usually to a deep red.

    6 species
  2. The harvest

Ripe cherries come off by hand or by machine, and each origin has its own season.

  3. Inside the fruit

Split one open: coffee is the seed of a cherry, usually two to a fruit. Which plant it grew on shapes a good deal of what follows.

    108 varieties
  4. Out of the cherry

Skin, pulp and parchment have to come off, and there is more than one way to do it.

    17 processing methods
  5. Green

Dried, sorted and graded, the seed is now what the trade buys and ships.

    14 grading systems, 18 certifications
  6. Into the drum

Heat turns it from green to brown. It swells, cracks once, darkens and cracks again, and past that the roast starts to replace the origin.
